Summer is in full swing, so naturally the grill is fired up and filled with veggies! What I Ate Wednesday is heating up!
Happy Wednesday, friends! Pretty uneventful week over here, so let’s dive into some noms!
John has been nursing a minor sore throat, so I was on my own for the gym this morning. Since I didn’t have a banana buddy, I just snagged a Brazil nut and a few raisins. Tasted like a deconstructed Larabar and I actually think I’m going to make it a more regular snack…
Will I ever get sick of my Chocolate Cherry Beet Smoothie? Survey says, no. I’ve been drinking it through this thin metal straw lately because I have a tendency to gulp it down in a split second and give myself a massive tummy ache. Oye.
I rode my bike to and from a doctor’s appointment and then to work, so needless to say I was ravenous by the time I got to my office. I gobbled down some grapes (so cool and refreshing after sweating to death outside) too quickly to even remember to snap a pic. I wasn’t satisfied so I slammed bag of Brad’s Kale Chips. They’re crispy and crunchy and cheezy and so healthy you can ignore the multiple servings label on the back panel and just eat the whole damn bag. Trust me, I have lots of experience in this.
Whilst rushing off to a meeting, I heated up a big mug of the black eyed pea soup I posted about last week. I froze a lot of it and it has made for some great warm lunches.
For dinner, we got grill happy and grilled a llllllll the veggies! I marinated eggplant slices in BBQ sauce mixed with a little broth, sliced up some mushrooms, and halved two big zucchinis. Look at the char on that eggplant! I dipped everything in extra BBQ sauce because… BBQ sauce.
This Healthaid kombucha flavor was new to me so I had to snag it when I saw it at Lucky’s this weekend. Sipped on it while we watched a movie and wound down from the day.
