A week in a hotel doesn’t have to mean sad days full of mediocre junk food. This What I Ate Wednesday is proof in the pudding! Errr.. in the kale?
Hola amigos!! Happy humpday! This is one of the stranger Wednesdays I’ve woken up to. I’m out of town at a work conference all week and traveling always gets me feeling all sorts of wacky. I’m a creature of habit to the core and live for routine. But life isn’t always routine, now is it? Switching up my daily schedule and spending my days without my favorite man and kitty cats has been challenging but I’m making it work!
Speaking of challenging… Let’s talk about eating on the road. This is a tough one. I’d love to say that I just threw a granola bar in my purse, cruised on down the freeway, and have been nomming on whatever the conference staff throws my way. But I’m just not there yet. I’m still living somewhat in a state of control around food. A year ago, I would have been proud of all of the prep I did before this trip, but now I feel like I’m just doing it to avoid having to eat anything that I didn’t directly create and thus control. But acknowledging it half the battle right??
I jammed all these goodies into a cooler before hitting the road! Overnight oats, apples, fruit puree packs, Larabars, Kind bars, PB filled pretzels, bagged salad mixed, baked sweet potato, nut butter packets, two types of homemade hummus, carrot sticks, celery, & crackers.
Good news is, the food here sucks so I’m definitely not missing out. I’d be more mad at myself for being so overly health-concerned if the food where I’m staying was fancy and high quality and delicious but it’s not. Hahahaha… not sorry. The conference is at a cheap indoor water park geared towards kids and the entire place smells like greasy Chuck-E-Cheese pizza. Not appealing. My fridge is stocked with goodies waaaay tastier than the buffet pans of soggy potatoes and overcooked eggs. Speaking of fridge, are you ready to dive into eats or what?!
I was excited that this place has at least a small gym, so I threw on my tennies and grabbed a bit of a new type of Larabar. Good news, the bar is tasty. Bad news, I killed 5 fruit flies while working out in the dirty facility. *gag*
One of the things I packed up in my cooler was four jars of overnight oats. Each jar is packed with 1/3 cup oats, 1/4 cup grated carrots, 1 Tbs chia seeds, walnuts, raisins, cinnamon, ginger, and a half scoop of vanilla protein. Then I poured enough milk to cover everything and shook them up. They’re hanging out in my fridge all week for a quick grab-and-go breakfast.
Snacked on an apple while learning all about building fundraising websites for our corporate partners. Sitting on my ass in a room with glaring fluorescent lights all day is literally my nightmare so snack time is about all I have to look forward to.
I was hungry before lunch so I finished of the Larabar I took a bite of earlier. If you ask me, the “Fruit + Greens” idea is a bit gimmicky but it actually tasted pretty good so I guess throwing some greens in there can’t hurt.
On Monday, I decided to give the hotel catering a try. The only options on the buffet involved some sort of dry-looking chicken or stinky fish but they had taken dietary restriction when I registered, so I was hopeful they’d have something plant based. Sadly, the meal they brought me (clear broth vegetable soup and dressing-less salad) was even less appealing than the buffet. Sigh… At least my crazy prep came in handy! Homemade Lemon Hummus with carrots, celery, and crunchy crackers was way more up my ally. My favorite kombucha garnered me some weird looks but was totally worth it.
I was falling asleep in my seat later in the afternoon so I grabbed some fruit and a half-caff coffee (wanna talk about another seriously lacking amenity of this hotel….).
When the day of training was over, I was pretty exhausted and definitely hangry. I munched on some peanut butter filled pretzels. Gotta say, I’m pretty proud of myself for bringing these with me because they’re a bit of a trigger food and I tend to have anxiety around them. Happy to admit I ate a few handfuls, felt satisfied, then put them away. You don’t own me, addicting snackities! I own YOU! Nom nom nom nom…
Dinner was another meal prep win. A microwaved baked sweet potato covered it in salt and peanut butter was heavenly! On the side, I tossed a pre-bagged kale salad mix with some homemade balsamic dressing I brought. So simple but so delish!
I laid in bed the rest of the evening, working on this post and fixing a seriously annoying problem I’ve been having with importing photos. I’m already tired of being in a hotel but only a few more days and I can head home to my bed and my Vitamix. Oh, and my sweetheart and furbabies too! 🙂
