Another day packed full of homemade, ready to eat, delicious meals! What I Ate Wednesday is yet another lesson on the value of weekend food prep!

Happy Humpdaayyyyy! Hopefully the first half of your week has been smooth and uneventful. I spent the entire day Tuesday thinking it was Wednesday soooo that’s where I’m at this week. Anywho, after a weekend of eating like garbage it feels good to be back in the morning gym rhythm. And you know we split a banana on the way there.

My 11-noon meeting ended up running until 1:30 (I know, woah) so I was ready to gnaw my arm off by the time I opened my lunch. I’ve been loving this big salad, inspired by the Mujadarra Power Salad at Aladdin’s, one of my fav Greek places around. My version is chocked full of: mixed greens, romaine, carrots, cherry tomatoes, kalamata olives, marinated lentils, and hummus. YUM!! I followed up lunch with this adorable teeny box of raisins because the sweet tooth is strong with this one.

I helped out at an after hours event, so I knew I had to snack up before I left. Polished my my stash of carrots and Lucky’s hummus– it did the trick!

Back to the eats! I was SO glad I had whipped up Alexis’s Baked Spaghetti with Kale, Mushrooms, and Tofu Ricotta this weekend. Seriously, I think this might be my favorite Hummusapien recipe of all time, and that’s saying something! Popped it in the microwave for a few minutes while I threw together a quick salad and dug in. I just love not having to slave over dinner on week nights!

After dinner, I snacked on some strawberries and Nutiva chocolate hazelnut spread. Holllyyyyy yum this stuff is good. Unlike the classic beloved hazelnut spread, Nutiva’s version is lower in sugar (by 40%!) and made with fair trade and organic ingredients. Although, you could have totally fooled me. I’d still roll around in a bath of the chocolate-y goodness… Just sayin’.

It’s hard to believe something so addicting and delicious can have no oil, no refined sugar, and less than 8 ingredients. But you better believe it because I’m not kitchen you, this stuff is the bomb. I brought a jar of it to work hoping it would last me the week, but ended up eating the entire thing in one sitting. Oops. But with an ingredient list this clean, it’s just hard to feel guilty!

A lot of dried blueberries are sweetened with sugar and coated in processed oil, so keep an eye out for a healthier brand. I found Steve’s Paleo Goods brand at my local grocery, which have two ingredients: wild blueberries and apple juice concentrate. If you can’t find these, just use whatever you have. [I know, just call me Ina.] You could also go crazy and use a mix of dried fruits for a mixed berry flavor. Yum!

If you’re like me and have zero self control when it comes to chunky, crunchy, lightly sweetened snacks, I recommend you make this recipe with caution. Or just eat the whole pan in front of the TV tonight. I’m not here to judge…

Blueberry Granola

Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Chunky, crunchy, chewy granola makes a hearty breakfast or satisfying snack. Add some juicy dried fruit and Blueberry Granola will have you reaching back for more all day!

Ingredients

  • 2 cups oats
  • 1 cup chopped walnuts (or other nuts)
  • 1 cup crisp rice cereal (or puffed rice)
  • ¾ cup dates
  • ½ cup hot water
  • ¼ cup almond butter
  • 2 Tbs. vanilla extract
  • ¾ tsp. sea salt
  • ¾ cup dried blueberries

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Add dates to a blender and cover with the hot water. Let sit for 5-10 minutes. Once softened, add vanilla and blend until completely smooth. Add almond butter and mix until just combined.
  3. In a large bowl, combine oats, walnuts, rice cereal, and salt. Pour the liquid ingredients over the mix and stir carefully until everything is completely coated.
  4. Spread out and bake for 35 minutes, gently stirring once or twice. The less you stir, the larger the clumps will be.
  5. Remove pan from oven and sprinkle dried blueberries over the top. Allow to cool completely before storing in an airtight container.

Haaayyyy loves. Happy Humpday! It’s What I Ate Wednesday and eat I have!

Per usual, my honey and I sleepily split a banana on the way to the gym. I forgot to take a picture because 5am is early, ok?

For breakfast, I slurped down another nutrient-packed smoothie. This week’s smoothie line up: frozen cauliflower, beets, banana, and cherries, chocolate protein powder, cacao, superfood greens powder, maca, spirulina, fresh ginger, turmeric, spinach, and almond milk. Whew! If you want to give this smoothie a try but are freaked out by the wild super foods, try just the fruit, veggies, and protein powder. SO good. I also sipped a homemade latte made of coffee, almond milk, and coconut butter whizzed up in the blender until super frothyyyyy!

I know it’s super annoying to listen to people whine about being busy at work because, duh, it’s work, so I’ll spare you the gory details of my day. I’ll also spare you the picture of my mid-morning apple because it was ugly. [JK apples are lovely- I just didn’t take one because I was BUSY y’all.]

Around 1 o’clock, I realized that the feeling in my head and stomach that I had been ignoring for the past hour was the hunger beast begging to be tamed. And boy, did I have something to feed that monster. I prepped ingredients to make burrito bowls for the week and they are hitting the spot! Tofu sofritas, cilantro lime rice made with half rice and half cauliflower, seasoned black beans, and fajita veggies. YUM! Afterwards, I sipped on a Suja Drinking Vinegar in the cucumber ginger flavor.

I worked late and was glad that I had some carrots and hummus stashed in the work fridge. I like to throw a huge tub of hummus and a big bag of carrots in the fridge at the beginning of the week. Keeps me from dipping my hand in the very-real-and-not-so-proverbial cookie jar.

Dinner was ridiculous… John is out of town so I just threw together some of the random shiz jammed in the back of our fridge. Leftover tofu scramble, steamed broccoli, hummus, and a frozen while wheat waffle topped with Kite Hill almond cream cheese and strawberry jam. As haphazard and bizarre as it looked, it was delish and totally hit the spot. #weirddinner
